Banana Muffins or Bread

Ingredients

  • 3 eggs
  • 3 large very ripe bananas well mashed
  • 1 TBS vanilla extract
  • 2 TBS honey or agave syrup
  • 1.5 cups almond flour
  • 2 scoops cinnamon roll protein powder Arbonne Brand if using another protein powder brand use vanilla and add more cinnamon
  • 1 tsp baking soda
  • Sprinkle of cinnamon
  • Sprinkle of kosher salt
  • Optional: dairy free chocolate chips and pecans

Instructions

  • Preheat oven to 350 degrees
  • Line small bread pan with parchment paper allowing the parchment paper to drap over the sides and spray with olive oil
  • Whisk together the eggs and mashed bananas, vanilla and honey or agave
  • Gradually whisk in almond flour, protein powder, cinnamon, kosher salt and then the baking soda.
  • Add in optional chips and pecans if desired
  • Whisk until smooth and then transfer to bread pan evenly distributing batter – tap pan on counter to smooth
  • Bake at 350 until browned and set – test by putting toothpick into center and when it comes out dry it is done , about 50-60 minutes.
  • Using excess parchment paper as handles, remove from pan and transfer to wire rack

Notes

Let cool and then slice and refrigerate.
